This recipe takes a minimum of effort, and comes very close to "hand stirred" risotto. We used Jasmine rice, and it took about 2 hrs of cooking.

This was a really great crock-pot version of risotto. The taste and consistency were pretty similar to what I'd achieve by attentively hand-mixing, but the dinner cooked itself!
