This recipe makes a very nice batch of rebaked potatoes. Perhaps the ham would be better diced than left in long strips, however.

This is a really quick version of stuffed potatoes (most of the other recipes I've tried are much more involved). The time saver in this case is microwaving the potatoes rather than baking them. I'm not sure it was really as successful, but they might have just needed to go a little longer. I'd also suggest reheating the filling somehow to serve them hot, for broiling them for the 2 minutes the recipe calls for really doesn't do it.
