This recipe delivers excellent results when made exactly as written. I have made it hundreds of times and shared it with many experienced and novice cooks. One is tempted to use the term "fool proof"--although I always hesitate to cast doubt on anyone's intelligence. Even though this is a really good recipe, I am an adventurous baker and have tried all kinds of experiments with this recipe. I think the best tweaks to make are substituting 1/2 cup of whole wheat flour for 1/2 cup of the all purpose flour, adding 1 tsp of vanilla extract with the mashed banana, and sometimes making a double batch and cooking it as a tube cake (same temperature for 40 minutes). The cake pan variation requires a well greased pan so it won't stick.
