These are an interesting opportunity to venture into a different culture to taste something familiar, yet exotic. The recipe is similar to any raised doughnut that uses yeast rather than baking powder for leavening. What is refreshingly different is the beautiful color and earthy sweetness contributed by the sweet potatoes. As with any homemade doughnut, these are best consumed immediately after cooking. I think the dough might freeze well--allowing one recipe's worth of dough to be cooked up on several occasions.
