The wontons are excellent in this recipe, but it's definitely a time-consuming dish. I also found some of the ingrediants too exotic, so I made a simplified version, cutting out gai choy and cloud ear mushrooms. I'd almost just suggest making the wontons in a chicken broth - they are very tasty.
