parker asks:

I have two bags of teff grain which I'm looking for a use for. Teff grain is widely used in Ethiopia, and ground into flour it can be used in bread, but this isn't flour; it's grains. I'd love any pointers to good recipes for using the grain, or simple instructions for making flour from it, which I can then use for bread.

Suggestions

  1. parker suggests Teff with other grains
Answering my own question, I know, but: it looks like all the best recipes (e.g. pancakes or bread) call for teff flour, not grain. Maybe following this recipe, I can use teff as a substitute for (or in combination with) couscous in another recipe?
