Some really flavorful and unusual vegetable dishes.   She also includes ideas for menu combinations.  My top favorite from this cookbook is the French Picnic Tart .  It is a superb.   savory vegetable tart made with potatoes, red pepper and onion with a little bit of gryere cheese on top.  I made it once for a road trip.  A strange thing to take in the car, but what a treat on a long drive.  Much better than the usual road food!
